Each morning at Small Vines begins with the meticulous task of monitoring the Brix and temperature of every active fermentation. Our Chardonnay and Rosé ferment entirely in barrel, while our Pinot Noir ferments in small open-top fermenters. Every vessel, whether barrel or tank, is individually sampled and logged to track fermentation progress with precision.

As a no-additive winery, we work exclusively with native yeasts and allow fermentations to proceed without the use of commercial nutrients, enzymes, or inoculations. This makes real-time monitoring essential. By carefully observing sugar depletion rates and temperature trends, we can ensure that each fermentation stays healthy and progresses naturally. This hands-on approach allows us to maintain purity, transparency, and consistency, without intervention.

Punchdowns, one of the most important rituals of winemaking. As fermentation begins, the grape skins rise to the top and form a ‘cap.’ By gently pushing that cap back into the juice, we unlock color, aroma, and texture, building depth and balance in every glass.

Think of a punchdown like using a French press for coffee full immersion, bold extraction. A pumpover, on the other hand, is more like a pourover graceful, steady, layered. Both have their place, and together, they shape the soul of the wine.
