Our Blanc de Blancs and Brut Rosé are crafted using the traditional method, a meticulous and time-intensive process that demands precision, patience, and an unwavering commitment to quality. Each wine undergoes a secondary fermentation in bottle, followed by extended aging on the lees for several years, an exacting practice that enhances texture, depth, and aromatic complexity. Throughout this lengthy journey, every bottle is carefully monitored, riddled, and disgorged by hand, reflecting the labor-intensive nature of true traditional-method sparkling wine. Finished with minimal dosage, these wines are released as brut nature expressions, allowing purity of fruit, terroir, and craftsmanship to take center stage.

Our Blanc de Blancs opens with an inviting bouquet of freshly baked brioche, green apple, and citrus zest, complemented by hints of white blossoms and a touch of minerality. On the palate, it delivers crystalline clarity and precision, with vibrant notes of lemon curd and crisp orchard fruit balanced by a creamy texture developed through long aging on lees. Subtle salinity adds depth and tension, leading to an elegant, persistent finish marked by lingering lemon zest and delicate toasty brioche. This wine embodies both finesse and complexity, offering a pure expression of Chardonnay shaped by time and restraint.

The Brut Rosé is equally expressive, presenting an enticing nose of ripe strawberry, raspberry, and pink grapefruit, accented by delicate floral nuances. The palate is lively yet refined, showcasing vibrant acidity woven seamlessly with a creamy mouthfeel from extended lees aging. Juicy red berry and citrus flavors are underpinned by a refreshing mineral backbone, lending structure and balance.
